After tackling the tough as ever Pineapple tarts, I decided to be easy on myself for the second installment of festive cookies baking. And that would be Peanut Cookies. You wouldn’t have guess how easy it is to make them unless you have done it before. It’s so straightforward even a novice will have no problems making them.
Peanut cookies are made of 5 simple ingredients namely flour, sugar, salt, peanuts and oil. That’s it! No prior preparations are needed unlike the pineapple tarts. Some recipes required lard but I prefer to use oil instead. Using lard does produce a more “meltier” cookie but that does not justify the unhealthiness of lard aka pork fat.
For the peanut cookies, instead of using only ground peanuts, I added some chopped peanuts as well. It still has the melt in your mouth feel but with a slight crunch to it. Well, some people might not like the coarse texture of the chopped peanuts, so feel free to omit that. It does not compromise the taste.
Do give it a try if you are up for “challenge” and I’m pretty sure you will not go for those store bought anymore. Well, I’m not so sure about you but I’m certainly going to make this every Chinese New Year because it’s so easy to make. I don’t see any reason why you can’t do it yourself. However, be sure to exercise some self restraint coz you will tend to eat one after another without you realizing it!! 😀
Peanut Cookies (I don’t remember where i got the recipe from)
200g ground peanut (powder)
1/2 tsp baking powder
90g icing sugar
1/4 tsp salt
100g coarsely chopped peanut
100g peanut oil/corn oil
1 egg yolk, lightly beaten with 1 tsp milk (for egg wash)
1. Put all the ingredients in a mixing bowl except the oil and mix till well combined.
2. Add in peanut oil (bit by bit) and mix until a pliable dough is formed. Add more oil if required.
3. Shape as you wish. Brush them with egg wash.
4. Bake in a preheated oven at 165 C for 20 mins.
*Use icing sugar instead of caster sugar to obtain a finer texture.
