Cooking For One? No Problem!

Most people will fret when it comes to cooking for one. More often than not, instant noodle will be featured. For the husband, it will be sandwiches or salads. Boring! Cooking for one has never been an issue for me for I have a foolproof recipe that I always fall back to – Minced Pork Noodles. It’s easy and fuss free. Think boiled noodles tossed and sautéed minced pork. Maximum 15mins are all I need to put food on the table. That’s fast isn’t it?

You can always cook a little extra minced pork and pop the leftovers in the fridge or freezer. The next time when you are feeling tired, all you need to do is boiled some noodles and tossed in the minced pork. Voila! A comforting meal within minutes!

Sautéed Minced Pork

1 tbsp oil
300g minced pork
4-6 shiitake mushroom (soaked in water), sliced
1 clove of garlic, minced

1 bowl of water
2 tbsp Oyster sauce
1 tbsp Light soya sauce
1 tsp Dark soya sauce
Dash of Shaoxing wine
salt & pepper, to taste

1. Heat the oil in a wok or large frying pan over high heat.
2. Sautéed garlic until fragrant and slightly brown. Add the minced pork and mushrooms. Stir-fry for few minutes.
3. Add the seasoning and water. Stir well and Sautéed for few minutes.
4. Dish out and serve over noodles or rice.

Guess what? We have the same foolproof recipe when it comes to cooking for one 🙂 Sometimes I’ll switch the minced meat to chicken instead. Herbal chicken soup with a bowl of white rice is also another go for recipe when I cook for one.
